Easy Quiche Lorraine

This crustless quiche is one of my favourite meals to eat, whether for an easy dinner or a yummy brunch. It is sure to please and requires very little effort to prepare. Mmmm, quiche!

Ingredients:

3 eggs
3/4 cup bisquick baking mix
1 1/3 cup milk
250g ham or bacon (diced)
1 small onion (diced)
1 1/2 cup grated Swiss cheese



Instructions:

*Preheat oven to 400 C and butter/spray your pan

*Mix ham, cheese, onion and bisquick



*Place ham & cheese mixture into your pan

*Mix eggs & milk-Beat well

*Pour milk mixture over the ham mixture



*Bake for 30-40 minutes until the top is golden and the quiche feels
relatively solid

Alternative suggestions:
I love to make a veggie quiche that uses: onion, mushroom, spinach (should be washed, dried & chopped) & cheese for the filling. Sometimes I also add a little feta cheese, but be careful if you add too many moist fillings your quiche won't rise properly in the middle (although it will still taste yummy!).

*I usually use a round corning ware dish to make the quiche, but when I didn't have one a 9x9 cake pan also did the job, so don't worry if you don't have a quiche pan, just try what you have available.
